Tasting the Signature Flavors of New Mexican Cuisine

New Mexico food is a vibrant blend of spicy flavors, traditional meals, and an innovative new style. Thanks to its cultural diversity, New Mexico is famous for fantastic flavors inspired from a variety of influences including Mexican, Puebloan, and American gastronomy. Join us as we explore the most iconic food you need to try on your next trip to the Land of Enchantment.


1. Breakfast Burritos

Start your day like a true New Mexican with a hearty Breakfast Burrito. Packed with scrambled eggs, crispy bacon or sausage, potatoes, and smothered in green or red chile sauce (or both), these handheld delights are the perfect way to kick off your culinary adventure. Head to Tia Sofia’s restaurant in Santa Fe for the most authentic version in the world.

2. Carne Adovada

Indulge in the slow-cooked perfection of Carne Adovada – tender chunks of pork marinated in a flavorful red chile sauce. This dish exemplifies the bold and spicy taste that is synonymous with New Mexican cuisine. This plate is ubiquitous in the New Mexican style cuisine, but one of my favorite places to try it is Los compadres restaurant in Albuquerque.

3. Posole Stew

A comforting bowl of Posole stew is a New Mexican classic, featuring hominy (dried corn kernels treated with an alkali) cooked in a savory broth with pork or chicken. Topped with fresh cilantro, radishes, and a squeeze of lime. It’s a delicious and satisfying dish that can be served as an entre or a side.

4. Biscochitos

Satisfy your sweet tooth with Biscochitos, the official state cookie of New Mexico. These anise-flavored treats, dusted with cinnamon and sugar, are a delightful accompaniment to a cup of hot chocolate or coffee. We found some delicious ones at a random food cart in Santa Fe Plaza.

5. Green Chile Stew

In New Mexico, green chiles are more than just a topping – they’re a way of life. Experience the fiery kick of green chiles in the Green Chile Stew, a hearty mix of pork, potatoes, and green chile sauce. This dish encapsulates the essence of the local’s love affair with green chiles. It even competes on Iceland’s level for soups.

6. Green Chile Cheeseburger

Elevate your burger experience with the Green Chile Cheeseburger – a juicy patty topped with melted cheese and a generous helping of roasted green chiles. It’s a delicious fusion of American and New Mexican flavors. Can’t verify for sure, but Blake’s Lotaburger claims to have the world’s best.

7. Sopapillas

For a sweet and crispy treat, try Sopapillas. These light, fried pastries are often served with honey or powdered sugar as a free appetizer or stuffed with some type of meat for a meal. An essentia on any New Mexico food tour.

8. Navajo Taco

A unique twist on a classic, the Navajo Taco features Indian frybread topped with seasoned ground beef, beans, lettuce, tomatoes, cheese, and a dollop of sour cream. It’s a flavorful blend of Native American and Mexican influences. We tried a delicious one at a food tent in the Albuquerque International Balloon Fiesta.

9. Frito Pie

Embrace the casual charm of Frito Pie, a beloved snack made by topping a bed of Fritos with chili, cheese, and all your favorite nacho fixings. It’s messy, satisfying, and quintessentially New Mexican. It’s the best drunk food you never knew you needed.

10. Blue Corn Pancakes

Wake up to the distinctive taste of Blue Corn Pancakes, a twist on the classic breakfast staple. The blue corn adds a nutty flavor and a delightful hue to these fluffy delights, often served with honey or syrup. Filled with Piñon nuts makes this an essential breakfast option in any New Mexico food tour.

11. Chile Rellenos

Delight in the smoky goodness of Chile Rellenos – roasted and peeled green chiles stuffed with cheese, meat, or a combination of both. Lightly battered and fried to perfection, this dish is a testament to New Mexico’s culinary creativity. Last time we tried this was on our Peruvian food tour.

12. Huevos Rancheros

Savor the bold flavors of Huevos Rancheros, a breakfast favorite featuring fried eggs atop corn tortillas, smothered in red or green chile sauce, and accompanied by beans and rice. Huevos Rancheros is one of the most flavorful meals you’ll find in the state, and you can enjoy it for breakfast or any other time of the day.

13. Calabacitas

Celebrate the bounty of the New Mexican harvest with Calabacitas – a dish made with sautéed squash, zucchini, corn, and green chiles. Seasoned to perfection, it’s a flavorful and colorful side dish that complements any meal.

14. Green Chiles

Green chile, the undisputed superstar of New Mexico’s culinary landscape, holds a revered status in the state’s cuisine. Grown under the New Mexico sun, these fiery peppers boast a unique flavor profile – a perfect balance of heat, sweetness, and a hint of smokiness. Whether roasted, stewed, or incorporated into dishes, green chile adds a distinctive kick that elevates every bite.

15. Red Chiles

No exploration of New Mexico’s culinary scene is complete without mentioning the red chiles that infuse many dishes with their distinctive flavor. From enchiladas to sauces, these fiery gems are a cornerstone of the state’s cuisine. Every server ends your order by asking red or green for your choice of topping. Of course it’s recommended you try the Christmas style (both red and green chile toppings).
